Mini Fruitcake

Ingredients

  • 3 eggs, well beaten
  • 1 (14 ounce) can condensed milk
  • 1 (28 ounce) jar mincemeat
  • 1 cup chopped nuts
  • 2 cups corn flake crumbs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 36 candied cherries, halved

Directions

  • 1 Preheat oven to 300 degrees.
  • 2 Place cupcake liners in muffin pans.
  • 3 In a large bowl mix all ingredients together, except candied cherries.
  • 4 Mix thoroughly.
  • 5 Using a spoon fill each liner 2/3 full with batter.
  • 6 Top with a cherry half.
  • 7 Bake for 20-25 minutes.
