Ingredients

  • 1 cup whole wheat flour
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 2 tablespoons lemons, zest of
  • 2 lemons
  • 1 cup Splenda sugar substitute
  • 1/2 cup Egg Beaters egg substitute
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 tablespoon poppy seed

Directions

  • 1 squeeze juice from 2 lemons (you should get 1/3 cup). use the rinds to get your zest.
  • 2 combine all ingredients and mix.
  • 3 bake in an 8 inches loaf pan sprayed with cooking spray for 30 minute at 350.
