German Farmer Breakfast

Ingredients
- 4 medium sized potatoes
- 4 slices bacon, cubed up
- 3 eggs
- 3 tablespoons milk
- 1/2 teaspoon salt
- 1 cup ham, cooked and diced
- 2 tomatoes, peeled, diced
- 1 tablespoon chives, snipped
Directions
- 1 Boil unpeeled potatoes until tender, drain and let cool.
- 2 Slice or dice potatoes.
- 3 In large frying pan cook bacon until translucent.
- 4 Add the potato slices, cook until lightly browned.
- 5 Meanwhile, blend eggs with milk and salt.
- 6 Stir in cubed ham.
- 7 Add tomatoes to egg mixture.
- 8 Pour the egg mixture over the potatoes in the skillet.
- 9 Cook until eggs are set.
- 10 Sprinkle with chopped chives and serve at once.
