German Farmer Breakfast

Ingredients

  • 4 medium sized potatoes
  • 4 slices bacon, cubed up
  • 3 eggs
  • 3 tablespoons milk
  • 1/2 teaspoon salt
  • 1 cup ham, cooked and diced
  • 2 tomatoes, peeled, diced
  • 1 tablespoon chives, snipped

Directions

  • 1 Boil unpeeled potatoes until tender, drain and let cool.
  • 2 Slice or dice potatoes.
  • 3 In large frying pan cook bacon until translucent.
  • 4 Add the potato slices, cook until lightly browned.
  • 5 Meanwhile, blend eggs with milk and salt.
  • 6 Stir in cubed ham.
  • 7 Add tomatoes to egg mixture.
  • 8 Pour the egg mixture over the potatoes in the skillet.
  • 9 Cook until eggs are set.
  • 10 Sprinkle with chopped chives and serve at once.
