Macadamia Nut Crisps

Ingredients
- 1/2 lb butter
- 1/3 cup fine sugar
- 2 ounces macadamia nuts
- 1 1/2 cups flour
- 1/2 cup desiccated coconut
Directions
- 1 Beat the butter and sugar until fluffy. Coarsely grind the nuts (I usually do this by placing in a zip bag and pounding them with a meat tenderizer). Add to the sugar mixture and mix.
- 2 Stir in flour and blend. Spoon heaping tablespoons of the mixture onto a lightly greased cookie sheet. Flatten slightly with a fork and sprinkle each with some coconut.
- 3 Bake at 350 F for fifteen minutes, or until lightly brown around the edges. Let rest on the cookie sheet for 5 minutes before removing to a rack to cool.
