Simple Creamy Pesto Pasta

Ingredients
- 2 tablespoons butter
- 100 g mushrooms, sliced
- 60 g prosciutto or 60 g ham, chopped
- 2 tablespoons pesto sauce
- 500 g penne pasta
- 2 tablespoons butter
- 2 garlic cloves, minced
- 2 tablespoons flour
- 3/4 cup chicken stock
- 3/4 cup milk
- salt and pepper, to taste
- 1/3 cup grated cheese (cheddar, parmesan, whatever takes your fancy)
Directions
- 1 Put pasta on to boil.
- 2 While the pasta is cooking, melt the first lot of butter and saute mushrooms, garlic and proscuitto (or ham). Remove from pan, keep warm.
- 3 Melt second lot of butter. Add flour and cook 1 minute, stirring constantly.
- 4 Stir in stock and milk and cook, stirring frequently, until sauce thickens.
- 5 Add the mushrooms, proscuitto and cheese.
- 6 Stir until cheese is melted.
- 7 Add the pesto, salt and pepper.
- 8 Toss hot pasta with sauce and serve immediately.
