Simple Creamy Pesto Pasta

Ingredients

  • 2 tablespoons butter
  • 100 g mushrooms, sliced
  • 60 g prosciutto or 60 g ham, chopped
  • 2 tablespoons pesto sauce
  • 500 g penne pasta
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 2 tablespoons flour
  • 3/4 cup chicken stock
  • 3/4 cup milk
  • salt and pepper, to taste
  • 1/3 cup grated cheese (cheddar, parmesan, whatever takes your fancy)

Directions

  • 1 Put pasta on to boil.
  • 2 While the pasta is cooking, melt the first lot of butter and saute mushrooms, garlic and proscuitto (or ham). Remove from pan, keep warm.
  • 3 Melt second lot of butter. Add flour and cook 1 minute, stirring constantly.
  • 4 Stir in stock and milk and cook, stirring frequently, until sauce thickens.
  • 5 Add the mushrooms, proscuitto and cheese.
  • 6 Stir until cheese is melted.
  • 7 Add the pesto, salt and pepper.
  • 8 Toss hot pasta with sauce and serve immediately.
