Bacon Muffins

Ingredients

  • 6 slices bacon
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 3/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons oil

Directions

  • 1 Grease 12 muffin cups.
  • 2 Preheat oven to 400 degrees.
  • 3 Cook bacon in a pan until crisp, then chop into small pieces.
  • 4 Mix together flour, baking powder, sugar, and salt.
  • 5 In a seperate bowl mix egg, milk, and oil.
  • 6 Add all at once to the dry ingredients along with bacon until just combined.
  • 7 Mixture will look somewhat lumpy but do not mix more.
  • 8 Fill the muffin cups 2/3rds of the way full.
  • 9 Bake@ 25 minutes.
