Ingredients
- 1/2 cup diced onion
- 2 cups lima beans
- 2 tablespoons butter
- 2 cups corn kernels, cooked
- 1 cup tomato, peeled,cored,seeded and diced
- salt and pepper
Directions
- 1 Boil lima beans in salted water for 5 minutes or until tender.
- 2 Drain well.
- 3 Melt butter in saute pan over medium low heat.
- 4 Add onions, beans, corn and tomatoes.
- 5 Saute, stirring often for approximately 5 minutes.
- 6 Add salt and pepper to taste.
- 7 Serve hot.
