Super-Easy Chicken Enchilada Skillet

Ingredients

  • 1 tablespoon oil
  • 1 lb skinless chicken breast half, cut into bite size pieces
  • 1 (14 1/2 ounce) can chicken broth
  • 1/4 cup ranch dressing
  • 2 tablespoons flour
  • 6 flour tortillas, cut into small pieces
  • 1 cup four-cheese Mexican blend cheese
  • 1/2 cup salsa

Directions

  • 1 Heat oil in large deep skillet on medium-high heat.
  • 2 Add chicken; cook 7 minute or until cooked through, stirring occasionally.
  • 3 Mix broth, dressing, and flour until well blended; gradually add to skillet, stirring constantly.
  • 4 Add tortillas; stir to combine.
  • 5 Bring to boil. Reduce heat to medium-low; simmer 3 minute.
  • 6 Sprinkle with cheese; cover.
  • 7 Simmer 3 to 5 minute or until cheese is melted.
  • 8 Top with salsa.
