Coffee Cream Filling

Ingredients
- 2 tablespoons instant coffee
- 1 cup scalded milk
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 2 eggs, well beaten
- 1 teaspoon butter
- 1 teaspoon vanilla
Directions
- 1 Scald coffee with milk.
- 2 Mix sugar, cornstarch, salt and well beaten eggs.
- 3 Strain milk; add gradually to sugar mixture.
- 4 Add butter; cook in a double boiler until thick and creamy, stirring constantly.
- 5 Add vanilla and cool.
