Coffee Cream Filling

Ingredients

  • 2 tablespoons instant coffee
  • 1 cup scalded milk
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 eggs, well beaten
  • 1 teaspoon butter
  • 1 teaspoon vanilla

Directions

  • 1 Scald coffee with milk.
  • 2 Mix sugar, cornstarch, salt and well beaten eggs.
  • 3 Strain milk; add gradually to sugar mixture.
  • 4 Add butter; cook in a double boiler until thick and creamy, stirring constantly.
  • 5 Add vanilla and cool.
