Jans Polish Sauerkraut Side Dish

Ingredients

  • 1 (17 -34 ounce) can canned sauerkraut, drained
  • 6 slices bacon
  • 1 small onion

Directions

  • 1 Fry bacon until just about crisp.
  • 2 Place on a paper towel to drain fat.
  • 3 Discard fat from frying pan except for about 1 tablespoon.
  • 4 Chop onion into 1 inch pieces.
  • 5 Place in pan and saute until translucent.
  • 6 Place on same paper towel to drain fat.
  • 7 In a large pot, place sauerkraut,1 or 2 cans of water, bacon and onion.
  • 8 Cook sauerkraut at least one half hour.
  • 9 Add salt and pepper to taste.
  • 10 Serve.
  • 11 Tastes better the next day.
  • 12 Optional- You can cook a link (1 pound) of fresh Polish sausage for added flavor and use the meat as part of your meal.
